My weight is still slowly, but surely, going up, no matter how hard I try, which is pretty depressing. :( This is mainly why I haven't posted as much. I don't want to just post about how bad everything is and how bigger I've gotten, but I am mentioning it now as I also don't want to lie to all of you and make everyone think I am some kind superior dieter who breezes through dieting and loses weight without any setbacks. People will go through difficult struggles/stages when dieting, and through life in general, and that's just obviously what is going on with me right now. I just can't seem to get out of this rut. :( But I won't stop trying.<br />

But anyway, on a nicer note: here is a very delicious recipe I tried about a week or so ago. It's a very tasty, very flavourful and a very colourful dish which everyone will enjoy - a Quorn paella. Meat and fish-free too, so also suitable for vegetarians! I tried my first ever paella <i>(a seafood one)</i> when I went to Mallorca in March, with college, and it was sooo good! Since then I had been wanting to make one at home. So I've finally got round to doing it. I am so happy with how it turned out. :)<br />

I'm writing today to explain myself a bit, as I do feel very guilty for the lack of posts, as I used to post so often and I did really enjoy writing my posts and creating my recipes. So here is why I haven't been posting much lately:<br />

One small reason is to do with the ridiculous amount of stress college is causing me. I'm falling seriously behind with college work, mainly due to the other reason... Which is something very personal and I don't want to go into it too much online but as a result of it I've been on daily medication since August 2013.</div>

I found since taking them I felt a bit better about myself, BUT any will power and motivation I once had towards food, calorie counting, cooking from scratch and exercise vanished completely. It didn't bother me to begin with, but my weight has been creeping up and up and up over the last few months. Even with aims, goals and new years resolutions which I put in place for myself to try and get myself back on track, they didn't seem to help. I'd eat when I was hungry and even when I wasn't hungry, simply because I just fancied eating or felt a craving for something in particular. It wouldn't matter so much if the food I was eating was fruit or vegetables, but it wasn't. It was ALWAYS things like cake, pastries, chocolate, takeaways, etc. etc. And I rarely felt any guilt for eating it... I would just sit and eat as much as I physically could until I felt like I was going to be sick. I could not turn any food down, which before I could. Since September I have gained about 1 stone. My clothes are getting too tight and even though it was upsetting me I still couldn't stop myself.</div>

So as of last week, I made a BIG personal decision (without the aid of my GP, which I probably shouldn't of done... but oh well) - I stopped taking my medication completely. I probably should have cut down the dose before stopping altogether, but I just couldn't wait for that. It was something I felt I had to do, as I can't deal with the thought of being fat again. You can all say what you want about that comment, but that's how I feel. After losing almost 4 stone in weight, selling/donating all of your old, bigger clothes and spending hundreds on a new, smaller wardrobe, the last thing you want to do is gain weight again. So, since coming off the medication I have found I've lost my appetite a little (which has helped slightly), I have gained a bit more will power again, I feel constantly dizzy and nauseous AND I have lost 2.75 lbs in a week. Although I despise feeling dizzy 24/7 (even when I'm sat or led down), starting to lose weight again makes it worth it. I will be seeing my doctor some time this week, but for now I will be staying off of my medication. I will only go back on medication if my GP offers me an alternative. So yeah, now I feel I can work towards my personal weight loss goals (even though I only have 9 days until my birthday party, so I have kind of buggered up that goal, but as long as I can fit in my outfit, it's okay).</div>

Right now, I weigh 9 stone 7.75 lbs and have kept below my calorie allowance on MyFitnessPal so far today. I've also booked a place on a Pole Fitness class at the gym tonight, so I'm feeling a little more positive and back on track. </div>

Soon I hope to get my motivation back to start posting more regularly and to start cooking from scratch again so I can start posting recipes again instead of apologies for the lack of posts... Towards the end half of 2013 my weight has slipped up. Between joining college in September and now I have gained about 10-14 lbs in weight (I'm not 100% sure on my weight at the moment, as I haven't really weighed myself the last couple of weeks as I'm so embarrassed and ashamed of myself about it). I'm not 100% sure why I've gained the weight. It's probably a big mix of the following: eating due to stress; comfort eating; being lazy; lack of willpower; losing all motivation; other peoples influences; and just feeling low in general. Lots of things really. I'm not happy with myself about the weight gain, but I am only human, and what's done is done. I am now ready to get back on track and shift these extra, flabby pounds! I'll be weighing myself first thing tomorrow morning <i>(dreading it)</i>. I want to start going back to the gym sometime this month too! I just have to work out how to fit it around my college course effectively.</div>

I used to be really good at saving up my money, but over the last year or so I have not been able to control my spending habits so well. I buy things for the sake of it and not because I need it, and this has taken its toll on all of my bank accounts. So now I've decided to start saving up my money properly again with the main goal of eventually moving out with my boyfriend. I'll be doing this by clearing out my things and selling it then putting the money away and also by putting a bit of money away into my savings each month. :)</div>

I was inspired to try make a pumpkin porridge after making a very delicious pumpkin pie a couple days ago. I made the pumpkin pie for 'Diversity Week' at college - I was in charge of the USA table and decided to make the pie as it was Thanksgiving the day after the event. Anyways, the porridge didn't taste as sweet as I expected it to, but I think that's because I should have added some brown sugar into the spice mix I created, to give it some sweetness - will definitely do this next time I make it (added it into the recipe, although I didn't do it myself)! Some may see this as an unhealthy way to lose weight, but it works for me and I can keep it up. I use the MFP app on my iPhone 4S as that way I can keep track of all my foods/drinks on the go.<br />

You enter in your details, such as height, weight, age, gender, etc. and how active you are in your everyday life and it then calculates approx. how many calories you need to consume each day in order to lose weight. I am calculated to eat 1200 kcal per day and for the first year-ish that really worked for me. But after starting the gym earlier this year (that I am currently not doing, due to health reasons, but I'd like to go back soon), I have had to up my calorie intake to 1400 kcal per day, as 1200 just wasn't enough and it was making me ill.<br />
<br />
Although this way of losing weight works, it can become seriously obsessive. Since starting using the app I have only ever missed about 20-30ish days <i>(mainly my holidays abroad)</i>. I calorie count everything. My good days, my average days and my seriously bad, binge-eating days. I weigh myself once a week too to keep track of my progress <i>(naked, every Friday morning and I place the scales on the same tile in the same room each time - I get paranoid if it's in any other place in case it's slightly inaccurate)</i>.<br />
<br />
I'd recommend this to anyone trying to lose weight. But I wouldn't try it if you know you aren't going to commit 110% to counting all f your calories<i> (even that one-off, sneaky chocolate biscuit you have with your cuppa)</i>. You must log everything in order for this calorie counting diet to work its magic.<br />

I personally LOVE this app, and even though I sometimes have my off-days and bingey-days, I don't think I'm going to stop counting my calories for a looong while. I actually enjoy it and love seeing results!<br />

I'm not known for being that good at gardening - I struggle to keep ANY plants alive in my house.. And I have also never grown my own vegetables before. But after receiving some free red onion seeds in the post, I thought I'd give it a go.<br />

Firstly, I planted my seeds into little trays and left them in the greenhouse to grow into seedlings. It was strange because I checked daily with no progress, but then suddenly - like over night - all of them popped up! I felt so proud that I actually managed to successfully grow something from scratch!<br />
<br />
Then, once all the seedlings had popped up, they were ready for re-potting. I came up with the issue that I had no land that I could dig up to plant my seeds in... If I dug up a patch in my garden, they'd get dug straight back up again by my rascal of a dog. But I found some old plastic storage boxes, so decided to get to work on those. I got a wireless drill and drilled lots of little holes all over the bottoms of the boxes to allow water to drain out the bottom. I then filled them all up with compost. I watered the compost to make it moist. I then started pulling apart and untangling the seedlings. I placed them evenly spread out into the boxes. Then I had to play the waiting game.<br />
<br />
Waiting for any onion-like things to start growing felt like forever. But once the first one appeared, again, it felt like they all followed suit, and soon enough I had 3 whole boxes full of little red onions! I was so proud of myself for not killing them all, which is what I expected would eventually happen.<br />
<br />
Personally, I think home-grown red onions are much tastier than shop bought ones! Especially the ones I grow. ;) I made everyone try them and the verdict was pretty much the same. The countless amounts of times going up the garden to water them and waiting for them to grow was well worth it! I'd recommend anyone to give growing their own vegetables a go. I found it strangely relaxing and it helps clear your head, and also gives you something to look forward to. I definitely want to grow some more in the future, maybe something different... potatoes maybe? Not sure yet. :)<br />

I have been receiving Graze boxes for almost 2 years now, and I still love them now as much as I did when I received my first ever box! A lot has changed since I first signed up... One of the newer one's I've tried recently is 'The Graze Brownie'. Although not super moist and squishy like a traditional brownie, it has all the chocolatey and nutty tastes of one. Sooooo delicious! Great when you're craving a chocolate bar, or just something sweet, but you don't want to give into temptation - this really satisfies that craving. ;) Although the portion is a little on the small side, it makes up for it in taste. Great for a snack, or even a little pudding after a meal. I definitely think Graze's best punnets are the cake/pudding based ones, the brownie being one of the top three!</div>

I have been up to my ears with coursework. I should really be cracking on with coursework right now! I will always have 3 or more assignments on the go at any one time, according to the tutors.. It's a lot harder than I ever would have imagined. Since joining college, I've been struggling very badly with stress, which has embarrassingly caused me to gain a bit of weight (comfort eating... Mainly junk too). In my opinion it is extremely noticeable, especially around my middle... I'm very disappointed and ashamed of myself about it actually.<br />
<br />
I received good news today though. My Mum has booked, and paid for, the venue for my 21st birthday (the beginning of next year)! I haven't had anything, since coming back from Magaluf in June, to focus on losing weight for. When I have something to aim losing weight for, such as an event or holiday, I tend to be more determined and have a little more willpower. So I can now aim to lose weight for my 21st birthday party! I want to be looking my best. My weight goal is to get towards the 8 and a half stone mark, give or take a little. Not sure how realistic that will be with Halloween and Christmas happening in between that time (likely to be lots of food, sweets, chocolate and alcohol around...), but I will give it my best shot.<br />

I have had a lot on my mind and a lot of changes have been going on..<br />

Firstly, I was put on medication. My Doctor reckons I'll be on for the next 6 months or so.. So it was getting used to those to begin with, waiting for them to kick in. I don't think I'm quite ready yet to write on here what it's for and what I've been through, where people I know can easily read this. I'd rather tell the people I feel I want to know about it in person. I might write about it at a later date.. I'm not sure yet. But anyway, before the medication I didn't do much writing on here either, hence the lack of posts this year, compared to last year. It took up a lot of my time. I'm hoping I'm on the mend for good now and that things will start going back to "normal".<br />
<br />
Secondly, I have enrolled at my local college. I have been twice previously, but I felt the courses I chose just weren't the right courses/career paths for me.. But I feel I may have found "the one".. Lets hope so anyway. I am doing 'Level 3 Travel & Tourism'. It was supposed to be a two year course, but I've now been told that I have to do and pay for Year 1 and Year 2 separately , which I'm not too happy about, as it's way more expensive for me that way. College is something that I have been preparing myself for, stressing and worrying about for the last 2-3 weeks. This Monday just gone was my first proper day of college. It was induction week this week, but course related work starts this Monday coming. I am so nervous! I've never been the essay writing type, so I hope I cope okay. I am going to try my hardest to do the best I can. I really want to achieve this, do well and make my family proud of me.<br />

So that is what I have been doing with myself. I have not forgotten about my blog. I check it every single day! I don't intend to stop writing it either. I have just cut down on the posts so I can focus on bigger things at the moment. As my new busy routine, of college and work, settles a bit, I'm hoping to make up for the recent lack of activity! So keep an eye out. As you know from previous recipes, I love a good smoothie for breakfast in the mornings. I also love sipping a coffee or two in the mornings too. Yesterday whilst making my smoothie, I thought why not just combine the two? And I'm glad I did, as it was absolutely delicious! I just wish I used a little more ice cubes or used a frozen banana to make it even colder. This year, July 14th, I took part in my local 5km Race For Life, to raise money for Cancer Research UK. As always, it was a great turn out and Hudson's Field was a sea of pink! I was number <b>436</b>. The message on my back was "<b>I race for life for everyone affected by cancer. <i>(Laura's Aunty Barb & Aunty Val)</i></b>". I offered to add my friend, Laura's, Aunties on my sign as she was unable to run the RFL herself this year.<br />
<br />
I was really hoping to beat my personal best time that I achieved last year <i>(32 minutes, 29 seconds)</i>, but I didn't quite manage it. I arrived a couple of minutes late and slightly hungover <i>(went to a birthday party the night before)</i> so it was hard to keep an eye on my start time. But my overall time was around 37ish minutes, I think. Of course I'm a little disappointed, but I guess it's not too bad considering I ran/jogged alone this year and the weather was beyond scorching! I had little heat blisters all over my shoulders and almost collapsed in a heap of exhaustion after I crossed the finish line. I could hardly stand up! I didn't manage to run/jog the whole thing without stopping this year, but I was kind of expecting that with the heat.<br />
<br />
Although I didn't beat my personal best time for completing the RFL, I beat my personal best on how much sponsorship I've ever raised. Most years I only manage to raise about £20-30, but <b>this year I raised a total of £65</b>! Makes me happy that I've raised that much money for such a great, well known charity.<br />

Well done to everybody who took part in the Race For Life this year! Same again next year? ;)<br />

This salsa was just thrown together whilst experimenting and just happened to taste delicious! Experimenting seems to be working very well for me lately, especially when it comes to my cooking<i> (both for my blog and <a href="http://pie-magazine.net/" target="_blank">Pie Magazine</a>)</i>. This is a lovely chunky salsa with a tangy taste and is very simple to make. Great for spreading in sandwiches, wraps or burgers or piled high on nachos or crispbreads! I have never made any kind of preserve before, so this was very new to me. It was so much simpler than I ever imagined. I thought you'd need lots of fancy equipment, but I was wrong. Do you own an empty jar, funnel, saucepan, saucers, cooker and a wooden spoon? Yes? Well you can make this jam!</div>

1. Although this recipe fills about one jar completely, I would sterilize two, just in case. To sterilize the jars and their lids, wash them with hot, soapy water and then rinse them off with very hot water. Now place them on a tray lined with baking paper and put into a cold oven. Once in, turn the oven on to 120<span style="background-color: white; color: #444444; font-family: arial, sans-serif; font-size: x-small; line-height: 16px;">°</span>c. Place two saucers in the freezer, which you'll use to test the jam later.</div>

2. In a medium saucepan on a high heat, put the gooseberries, water and lemon juice in and bring to the boil. Once boiling, turn the heat down and simmer for 10-15 minutes until it turns pulpy.</div>

3. Now, on a very low heat, pour in all of the sugar and stir until it dissolves completely. Once dissolved, turn the heat up high and bring to a hard boil. Boil for about 7 minutes. The jam mixture should start to turn a reddy/pinky colour.</div>

4. To test if the jam is ready, take out one of the chilled saucers and put a little blob of the jam mixture onto it. Leave it to cool slightly. Run your finger through it, if it wrinkles, it's ready. If it doesn't, boil the mixture for a further 3-5 minutes and test again. Keep repeating this until it's ready.</div>

5. Take the jars out of oven and leave to cool slightly. Using the funnel, pour the jam mixture from the saucepan into the sterilized jar<i>(s)</i>. I managed to only fill one jar perfectly to the top. Remove the funnel and screw the lid on tight and leave to cool overnight. This jam should keep for about 6 months.<br />

Last Monday, my best friend, Emily, and I went fruit picking together at <a href="http://www.bakefarmcoombebissett.co.uk/" target="_blank">Bake Farm</a>. I had never heard of this little place before, but Emily goes quite regularly and I asked if she'd come with me one day. The weather was perfect - nice and hot. It's such a beautiful, peaceful place, tucked away from busy main roads and houses. There are rows upon rows of strawberry plants and sooo many different varieties of strawberries to pick from! There's also gooseberries and raspberries to pick too <i>(there's a couple other plants too, blueberries and runner beans I think, but they weren't ready for picking quite yet)</i>. It is surprisingly cheap. Coming to the till, I was expecting the fruit I picked to cost at least £10 or more... I picked a whole punnet of strawberries <i>(mixed varieties)</i> and about half a punnet each of raspberries and gooseberries for under £8! I will definitely be getting all of my strawberries and raspberries from here in the future - they are just too delicious to go anywhere else for them now! I have made mini lunchbox fruit salads and smoothies from the strawberries and raspberries <i>(plus a few other ingredients from elsewhere)</i>, and I'll hopefully be making either some jam or maybe a tart with the gooseberries, if I get time to do it.<br />

I made another smoothie, very similar to this one, using more of the strawberries and raspberries I picked from Bake Farm. I used the same recipe as above, but I removed all of the porridge oats and added in 1 small avocado. It was delicious, very smooth and creamy! Just in case you want to give this a go, this smoothie <b>serves 1</b> <i>(roughly a pint glass worth)</i> and is approx. <b>300 kcal</b>.</div>

Last month <i>(5th June - 13th June)</i>, my boyfriend, Jago, and I went to sunny Magaluf together. We booked it only three weeks before we left for the holiday <i>(very last minute for us)</i>! We booked a week, self-catering, in the Mallorca Rocks Hotel. I hadn't read any reviews on it, but out of curiousity, two days before leaving, I decided it'd be a great idea to read the reviews about the hotel on TripAdvisor... Seriously bad move! I then got myself in the biggest panic as every other review seemed to be extremely negative and talked about getting their rooms broken into, getting their money/passports/etc. stolen, being mugged on the way home, prostitutes hanging around the front of the hotel, etc. etc. I wish I never read them! I get pretty nervous when leaving home without my Mum anyway, so having this to worry about too felt awful.. Having come back now though, I'm not too sure why I got so worked up, as I had an amazing time!<br />

Whilst rather intoxicated at the 2wenties welcome meeting <i>(hard to turn down free, unlimited jugs of cocktails)</i> we bought a package deal. The package included a foam party, a carwash party, tickets to the Pirates Reloaded show <i>(which was <u>AMAZING</u> to watch!)</i>, tickets to BCM, a pub crawl and a booze cruise. This made us really start to get in the mood and excited for the week ahead! Also as we were staying at Mallorca Rocks Hotel, we had access to their gigs and W.A.R. nights. We saw Baauer, Rizzle Kicks, Ms Dynamite, Mistajam, etc. live, which were all pretty good! All things we booked with the package were epic and so much fun! I have never drank so much alcohol in such a short space of time. 8 days in a row I was drinking... I blame the free bars for this <i>(after midnight, until 6am)</i>! Outside of the package deal, we went down to the beach, went on a banana boat, dipped in the hotel pool, spent hours and hours sunbathing, went for meals together, went on the bungee ball ride thing<i> (not sure what it's called)</i>, went on a 'bucking bronco' ride <i>(which I was totally awesome at)</i> and went to Western Water Park. The water park didn't have many slides, but the ones that were there were a tad crazy! One was terrifyingly high, but I managed to push myself to do it <i>(after having a panic about how high we were half way up the stairs to the top)</i>. I'm proud that I did it, but I doubt I'd ever do it again!<br />

Being a pescitarian, I did not have much choice in what food I had to eat. Most days we just bought food from the Spar shop to eat at lunch times, and then we ate out for tea. For lunch, every single day, I had brown bread sandwiches filled with tinned tuna and sweetcorn, mixed up with mayonnaise and slices of cheese. By the end of the week, I was sick of the sight of tuna! Meals out had a bit more to pick from, but nothing that exciting... The majority of most menus were meat dishes. I tried calamari, which I'd never tried before, but that was about it. Everything else was things that I could easily find in England. There was so many takeaway places! We had a takeaway most nights <i>(bad, I know.. But I mainly blame the alcohol for this)</i>.<br />

All the food and stupid amounts of alcohol throughout the week made me gain a total of 5 and a half lbs! I was a bit upset by this, but wasn't expecting much else really, considering the amount I drank each night. I have now lost all of this weight since coming home, so all is good again, and I am back on track! Last year, after returning from <a href="http://skinny-wish.blogspot.co.uk/2012/05/im-baaack.html" target="_blank">our holiday to Turkey</a>, it took me a seriously long time to get back on any kind of track... I didn't manage to get back to the weight I was before leaving for Turkey at all. But this year it's going a lot better. I also came back from Magaluf with the worst chest infection <i>(I think I may have caught it on the plane as their were a lot of sick/coughing people on the plane back)</i>. It's pretty much gone now though, thank God!<br />

Overall it was a really fun, fantastic holiday. The mega-hangover I suffered when I got back was well worth it. We made some really great friends whilst out there too, which is a bonus! Only tiny downside is that the tan I got is rather pathetic compared to tans I've had from previous holidays, despite frazzling in the sun for hours on end.. Oh well. I would definitely love to go somewhere like this again! This is a little recipe of mine that I have been experimenting with over the past 2 weeks, chopping and changing and trying to improve the taste each time I make it. As I may have mentioned before, I LOVE pizza. It's my takeaway of choice. A big, fat cheese pizza with a BBQ sauce base is normally my choice, but I also love a good cheesy tuna topped pizza. Every now and again it is good to treat yourself to little naughty foods, such as pizza. But it's very easy to let it get out of control. Moderation is key. But you can remake a much healthier version of your favourite pizza at home. Replace the doughy base for portobello mushrooms! Simple as that. It may sound a bit small compared to the size of a regular takeaway pizza, and it is, but it really does make up for it in taste, and can be surprisingly filling too. I chose to remake my much loved cheesy tuna topping for my portobello mushroom pizzas, and here's what I did:<br />

After placing the toppings on the mushrooms, you may find you won't need to use all of the toppings. Don't worry! I didn't use them all up either. Read at the bottom of this recipe a way that you could use up the leftovers.<br />

If the toppings on this pizza don't take your fancy, you could try these:<br />
You can recreate almost any of your favourite pizza toppings to go on your portobello mushrooms bases. You could top one with diced tomatoes, grated cheddar and mozzarella cheese and, once cooked, add some basil leaves and a little drizzle of extra virgin olive oil on top for a margherita pizza. You could add a little sliced up pepperoni and sausage and a little squeeze of BBQ sauce on top of some diced tomato and grated cheese for a meaty pizza. And of course sliced up ham, pineapple and sweetcorn on top of diced tomato and grated cheese for a Hawaiian pizza. Get creative & see what other tasty pizza toppings you can come up with!<br />

<b>4.</b> Now fill them evenly with the tomatoes, as the base layer. Now sprinkle a tiny bit of the cheese and then top with the red pepper and red onion<i> (before putting these on, I mixed them both together - you don't have to do this, but I found it easier)</i>. Spread the tuna on top & then finally sprinkle all of the remaining cheese over them. Pat/push down the toppings gently after each layer so that nothing is just balancing on top.<br />

<b>5.</b> Place them under the grill for approx. 10-20 minutes <i>(depending on how well your grill grills, mine's rubbish!)</i>, until the cheese is melted/golden and it's piping hot throughout. If you have leftover toppings, as I did, you can use those towards making another delicious meal. I had tuna, tomato and a little bit of onion and pepper left over. So I put it all in a bowl, added a dollop of low-fat mayonnaise and stirred it all together, and now you have a tasty sandwich/wrap filling. I filled mine into a wholemeal wrap, grated over 10g of low-fat cheese, folded it up and stuck it in my health grill for 2 minutes. It was absolutely delicious and the flavours taste great together. The filling also tastes good cold and still tastes nice without the cheese. You could also use it as a jacket potato filling. If you have no tuna leftover, you could use the diced veggies to create a chunky salsa. You could add in a freshly chopped chilli for some heat and maybe some avocado for some taste and texture. These enchiladas were originally created by just experimenting with random ingredients I had in my cupboards. This isn't my first attempt at creating enchiladas from scratch. I've tried once previously, but I only made it a single serving. As I loved my first creation so much, I made it again but altered the recipe slightly to enhance the flavours. Originally I didn't include pepper, chilli, paprika or cayenne pepper into it. Considering I never looked up any recipe and have never made or even seen a homemade enchilada before, it turned out amazingly.<br />

My best friend, Emily, came over for the afternoon so I thought it would be a great excuse to attempt to create the same dish all over again, but "family-sized" <i>(and of course, her stirring-skills were a great help to me as I prepped the ingredients as I went along - not recommended, as if you don't have the extra help, this can be rather time consuming!)</i>. The dish went down a hit with everyone, and they've all requested that I make this dish for them on a regular basis, which feels great to hear!<br />

If you prefer your real meat to your meat substitute, just replace the Quorn/vegetarian mince with real mince. <b>2.</b> In a medium sauce pan on a medium-high heat, pour in the frozen Quorn mince and brown it off. Now pour in half of the chopped tomatoes and half of the tomato passata and add in 3/4 of the onion, all 3 garlic cloves and 1 pepper. Stir well and cook for approx. 10 minutes.<br />

<b>3. </b>Stir in the paprika, cayenne pepper, a dash of Worcestershire sauce, ketchup and seasoning and cook for a further 2 minutes.<br />

I remember buying the first ever issue of Pie back in school <i>(originally a paper copy)</i>. I loved reading it, and never imagined that I would one day be a part of it.<br />

I am Pie's "<i>Senior Recipe Writer/Guru</i>" and I write recipes which are mainly naughty, calorific baking recipes. I decided to write these types of recipes because I really enjoy baking and sharing them with family and friends and then receiving their feedback on what I've made. I used to bake very often, but since dieting/calorie counting, I haven't been able to do it as often as I use to as it seems to really effect my waistline. So being able to do it once a month, for a good purpose, is great fun! So I keep my naughtier recipes for Pie and my healthier recipes for my blog. I have also submitted a savoury recipe for Pie's upcoming annual for 2013, but what I've made will remain a secret until it's published. I am now on day 13 out of 30. Why have I decided to join everyone else and put myself through this leg-and-bum-torture? Because my boyfriend, Jago, & I have booked a last minute holiday and we leave in just 13 days! We're going to Mallorca Rocks, Magaluf, for a week and I am battling for my bikini body back, which I had last year when I went to Turkey <i>(<a href="http://skinny-wish.blogspot.co.uk/2012/05/im-baaack.html" target="_blank">click here for the blog post</a>)</i>. As I haven't been able to attend the gym lately<i> (recent health issues)</i>, I need something to make me feel like I'm working out and making an effort. I'm aware that I'll only get to day 26 before actually leaving for our holiday, but that isn't going to stop me. Ideally I'd like to be at the same weight as I was before I went to Turkey, but the likelihood is that's a bit unrealistic with the amount of time I've got to do it, but that won't stop me trying my hardest!<br />

Here's a scan of my notepad with the whole challenge written out. I need to write it out myself rather than continuously keep looking up for it online each day, otherwise I probably won't do it. The first 3 days were by far the most painful. By Day 3, stairs were out of the question! I'm quite shocked at how much it actually raises your heart rate and how sweaty you get just by doing squats! From Day 5 onwards, I actually have to stop for a few seconds between every 10-20 squats as I just get so hot and bothered I can't seem to push myself up from the bottom of the squat, haha.<br />
<br />
I didn't take a before photo, so I don't know how I'll be able to compare any real difference. I'm just going to have to try and take a photo of how it looks now <i>(at Day 13)</i>, and then take one when it's over and see if there's any noticeable change. I'll post the results at the end of the challenge. If there is a noticeable difference, I may give myself a bit of a break and then restart the challenge all over again from the beginning.<br />

I tried my first porridge from Graze yesterday. It was the blackcurrant & cranberry porridge with honey and it was absolutely delicious! I've never had honey in porridge before, as I'm not overly keen on honey, but it was really nice and really complimented the flavour of the porridge. If you have a sweet tooth, this would be perfect for you as the honey makes it VERY sweet. There isn't a lot of porridge once it's all made up, but the tastes definitely makes up for the lack of food! The bigger porridge punnets would probably make a more satisfying amount of porridge, but it doesn't come with honey. I am quite tempted to keep paying to receive these. I'm probably going to have to move around how often I receive both of the different Graze boxes though, otherwise I am going to be so poor!<br />
<br />
The porridge is really simple to make. The instructions are in the leaflet you receive with them, but in case you misplace it, all you do is:<br />
<br />
<b>1. </b>Pull the lid off the top of the oats <i>(keep the lid sealed over the honey if you can)</i> and pour the oats into a bowl.<br />
<b>2.</b> Fill up the part of the punnet that had the oats in one and a half times with your choice of milk <i>(I used Alrpo unsweetened almond milk)</i>, and pour into the bowl with the oats. If you're having the bigger punnet of porridge, without the honey on the side, fill it up twice with your choice of milk and pour it in.<br />
<b>3.</b> Now pop it in the microwave for 2 minutes.<br />
<b>4.</b> Take it out and give it a stir. If you're going to use the honey, just take the lid off of the honey, and pour as much as you want of it into the porridge and give it a good stir.<br />

You need to live in the UK to be able to receive Graze Boxes. When you sign up they do ask for payment details - don't panic! This is only in case you decide to continue to receive boxes after you get your free one. If you only want the free box and no more or if you receive your first box and decide you really don't like Graze, cancelling with them is very simple and fuss free - it's a very trustworthy site and I know people who have cancelled with them before with no issues whatsoever. It tasted gorgeous! We all had a dollop of it on our burgers <i>(and I kept sneakily having some on its own, as I just loved it that much)</i> and it went so well! It could also go on crispbreads, crackers, on toast or in sandwiches. Jago has kindly let me feature his recipe on here! It may not be the healthiest of recipes, but as long as you don't indulge in too much of it, it shouldn't be too bad. Its very sweet and really hits the spot if you're craving a little sugar. Sorry I don't have any photos throughout the making of this little delight - I was distracted getting the rest of the food ready. If we make it again, I'll snap some step-by-step pics and edit them into this post. :)<br />

I'm not too sure how many servings this recipe makes. But the whole recipe itself is <b>459 kcal</b>. So I guess if you just divide it all out evenly amongst everyone, then divide 459 by how ever many you divide the marmalade into, it'll give you an approx. amount of calories for your serving. I wouldn't have too much though as it's quite calorific. Sorry for not being overly helpful!<br />

<u><b>Ingredients:</b></u><br />
- 1/2 tbsp oil<br />
- 4 red onions, sliced<br />
- 1 garlic clove, crushed<br />
- 2 tbsp sugar<br />
- juice of 1 orange<br />
- 1 cup of red wine <i>(or enough that it just covers all the tops of the ingredients in the pan)</i>.<br />
<br />
<b><u>Method:</u></b><br />
<b>1.</b> On a high heat, in a medium saucepan, cook the onions and garlic in the oil until it starts to go soft.<br />
<b>2.</b> Add in the sugar and keep stirring it all around. Cook until it starts to bubble.<br />
<b>3.</b> Add in the orange juice and let it simmer for about 2 minutes.<br />
<b>4.</b> Now pour in the wine, turn down the heat and allow to simmer until it reduces and thickens. It should have a sticky constancy.<br />
<b>5.</b> When ready, pour into a bowl and let it cool down. Once cool, cover it up and keep it in the fridge. Once cold, it's ready to use when you are!<br />

<b>5.</b> Now, from the burger meat mixture, weigh out 120g of it and, either using a burger press or your hands, make it into a even, circular burger shape. The last burger you make will probably weigh a bit more than 120g, but that's okay.<br />

Since being a vegetarian, I have found it extremely difficult to find nice tasting veggie burgers. In my opinion, Quorn burgers are horrible and I will never touch them again <i>(although I like almost all other Quorn products)</i>. I've tried Tesco's meat-free burgers too and they are equally as disgusting. So I have always kept an eye out for an easy-ish looking veggie burger recipe to try and I have finally found one that has taken my fancy <i>(I have tried making my own experimental</i><i> bean burgers before - <a href="http://skinny-wish.blogspot.co.uk/2012/11/my-experimental-bean-burgers.html" target="_blank">blog post here</a> - but they didn't turn out so good.. These chickpea burgers are really delicious. Mine didn't turn out quite as neat looking as the ones photographed in the magazine, but I don't mind... As long as they taste good, that's all that matters. A couple of them burnt a little <i>(although I couldn't taste any burntness)</i> and others crumbled into pieces, but both my family and I really enjoyed them. They felt like the perfect meal to enjoy on a sunny day like today. They'll also be great for barbecues in the Summertime. The burger looks so appetising when assembled with all the garnishes, and it definitely tastes as good as it looks. The lemon and sweet chilli dressing is incredible. If I were to make these again, I'd definitely make two batches of the dressing as I just want to smother everything in it!<br />

This recipe <b>serves 4</b> people and is approx.<b> 295 kcal per serving</b> with the garnish, but <u>without a roll</u>. <i>(I've not included the roll because you may use different rolls as I've used.. Just add on how many calories 1 roll of your choice is worth to the calories above, which will give you an approx. amount per serving with garnish and your roll of choice)</i>. The chickpea burgers on their own are approx. <b>210 kcal each</b>.<br />

<b>3.</b> Heat a little low-kcal cooking oil spray in a frying pan, then cook the patties over a medium heat for 2-3 minutes on each side until golden and cooked. <i>(Don't worry too much if they fall apart like mine did - they'll be a bit messy but they'll taste just as good)</i>.<br />

<b>4.</b> To serve, top the bottom half of each roll with spinach leaves, a chickpea burger, tomato and avocado slices, then the feta/salad cheese. Drizzle over the lemon and sweet chilli dressing, then add the roll tops.<br />

I'm sorry for the lack of posts.. I have been quite poorly lately, with a chesty cough and a really bad cold. I have had no energy or motivation to get out of bed most days, other than for work, but even that was a struggle. I have never seen a pile of tissues so high - I have gone through boxes and boxes of them this week! I'm starting to feel a bit better now though, but I'm still sniffing and coughing a little. I've naughtily avoided the gym whilst feeling ill too, which I probably shouldn't have, but hey-ho.. So I really need to get back to it and get back into a routine again! I will also get on and get a recipe sorted and posted soon! Whether it be a smoothie or a meal, I'm not sure yet..<br />

I'm feeling pretty tempted to make a meat dish for all you meat-eaters out there, as I've never posted any healthy meat recipes on my blog before. I won't personally be trying the dish though, as I'm a pescetarian, but I'll get my family to taste-test it for me before posting. I have no idea what I'm going to make though.. I'm pretty clueless when it comes to meat, how to cook it or what each meat goes well with.. I'll have to do some research first, I think.<br />
